    • [EXPIRED] Cheesy Broccoli and Rice Casserole

      November is here so it's time to dig out the recipes for Thanksgiving dinner.  I know all of you have your traditional way to make your turkey and dressing, so I am going to give you a recipe of a great side dish that has been around for years, each made a little differently.  I will also give you a hint about making your mashed potatoes a day in advance, so don't miss that.  This Broccoli Casserole was handed down to me from my Mother and is so good.  It is very easy to make, and can be made in the morning, just refrigerate it until you need to bake it and allow a bit more time in the oven because it is cold.  This is a great way to maybe get kids to eat their vegies because of the cheese, they all love cheese!  Hope you enjoy this recipe and I want to wish you a very Happy Thanksgiving.  To contact me please feel free to send an email to sandiesgalley@gmail.com and visit my website, www.sandiesgalley.com for Holiday specials and of course free recipes.
       
      Now for the mashed potato hint.  Cook them as you always would, drain, and instead of adding milk to mash them with, use sour cream or cream cheese.  The milk makes the potatoes watery, the cream does not and hold off on the butter for now too.  It will take about 8 minutes in the microwave on high to heat them up before serving, stirring 4 times or so.  When hot enough to serve, add your butter and mix well.  No one will know but you that you made these the day before.
      Cheesy Broccoli and Rice Casserole
       
      Pre-heat oven to 350 degrees
       
      1/2 c. butter
      3/4 c. chopped onion
      2 c. minute rice, brown or white
      1 (10 3/4 oz)can cream of mushroom soup
      1 (10 3/4 oz.) can cream of chicken soup
      1/4 tsp. garlic salt
      1/2 c. milk
      1/2 c. water
      1-2 (14 oz.) bags frozen broccoli cuts, thawed
      (how green do you want it?)
      1 to 1 1/2 cups Cheese Whiz or Velvetta cubes
       
      Saute' butter and onions in a small pan, combine the rice, and 2 soups, stir in the milk and water, then add the broccoli.  Mix well.  Spoon into a 9×13, or equivalent baking dish and top with tablespoons of Cheese Whiz or cubes of Velvetta.  Bake for 35-40 minutes. The cheese will start to brown around the edges.  MMM MMM Good!
