    • [EXPIRED] Lover’s Foiled Baked Salmon

      Heads up ladies, Valentines Day is just around the corner and you know the saying, "The way to a man's heart if through his stomach" so how about making a melt in your mouth salmon fillet and of course the famous Red Velvet Cake.  This salmon is so easy and so moist.       Lover's Foiled Baked Salmon
       
      4 salmon fillets (5 ounces each), rinse under cold water and pat dry
      2 tsp. olive oil, plus 2 more tablespoons
      Salt and freshly ground black pepper
      1 (14.5 oz.) can diced tomatoes with chili's
      1/2 c. canned sliced mushrooms, drained
      2 T. chopped sweet onion
      1/2 tsp. minced garlic
      2 T. fresh lemon juice
      1 tsp. dried oregano
      1 tsp. dried thyme
      Grated Parmesan cheese, for topping
       
      Preheat oven to 400 degrees.
       
      Sprinkle the back side of the salmon with 2 teaspoons olive oil, salt and pepper.  Stir the rest of the ingredients, except the Parmesan cheese, in a small bowl to blend.  Place each salmon fillet, oiled side down, on it's own of foil.  Fold the foil up as to make a bowl, then spoon tomato mixture on top of each fillet.  Cover completely with foil now and seal.  Place the packets on a cookie sheet and bake for about 25 minutes, or until salmon is cooked through.  Transfer the foil packets using a metal spatula to plates and serve, or remove the fillets carefully from the foil and place directly on the plate.  Sprinkle the top with Parmesan cheese before serving.  Serves 4.
