[EXPIRED] Grilled Pizza Sandwiches
Everyone, everywhere loves pizza! With that being said this recipe is for YOU! Here is how it all happened. Watching the Food Network channel one day in February, I saw Bobby Flay make a mozzarella cheese sandwich. It looked really, really good, so I looked at the recipe online. I was going to make it as is with maybe one or two changes, and then it hit me like a mack truck! I said to self,"Why not turn this into a Grilled Pizza Sandwich." Our dear friends were the taste testers, thinking we were going to order pizza to be delivered while playing cards, I surprised them with this recipe below. They were not disappointed to say the least and you won't be either. You gotta trust me on this one!
Have fun with it, change the meat to what you like and the vegies that are used. Add mushrooms, use pepperoni, even pineapple, the options are endless, but you must write to me by going to www.sandiesgalley.com and tell me what you did and how you liked it. Grilled Pizza Sandwiches
4 slices thick-cut Italian Bread
1 (1 lb.) ball fresh mozzarella, cut into 1/4 inch slices
1 c. pizza sauce
1 T. fresh basil, chopped
1/2 c. Parmesan cheese
4 red onion slices
4 ham slices, or pepperoni slices
8 thin slices green pepper
Olive oil
Add the chopped basil to the pizza sauce, stir. Assemble sandwiches by spreading 2 tablespoons of sauce on inside of one bread slice. Sprinkle Parmesan cheese on sauce, then arrange onion slice, ham or pepperoni, green pepper slices and then the mozzarella on one piece of bread. Top with the other piece of bread to make the sandwich. Heat drizzles of olive oil in a skillet, place sandwich in pan, and place another heavy skillet on top of the sandwich to press it, or use a panini press. Cook for 2-3 minutes, turn, replace weight and cook until golden brown. This can also be done on an outdoor grill. Makes 2 super pizza sandwiches.
