    • [EXPIRED] Sandie’s Easy Gazpacho Soup

      Cold soup, yuk, or so I thought until I tasted my friends gazpacho, I couldn't get enough of it.  She got the recipe from a restaurant that is now closed, and wanted me to tweak it.  I liked it very much just the way it was but did add a few ingredients to it, one is the celery for a little extra crunch, the other 2 ingredients are a secret, ha ha.  This is the easiest, refreshing, weight watcher friendly soup that you can eat as much as you want.  Serve a cup up to curb your appetite, if you are counting the points or trying to keep calories and fat intake low.  Have it for lunch, serve it before dinner, eat it if you are hot on a 90 degree day, or just because you like it.  Let's also remember that tomatoes and garlic have so many antioxidants in them to help fight against some of the nastiest diseases.  Now, to make it even more tempting, it will last for days in the refrigerator.  If you like tomatoes, or salsa, you will love this soup.  Try it and let me know what you think by contacting me at my website www.sandiesgalley.com, or at my new website store, www.sandiesgalleyandmore.com  Spruce up your boating with some great deals!  See you next month.
       
      Sandie's Easy Gazpacho Soup
       
      32 oz. diced tomatoes with basil and garlic
      or, with green chilies for more spice
      1 seedless cucumber diced
      1 med. yellow or orange pepper
      2 stalks celery, diced
      1 med. sweet onion, diced
      4 cloves garlic, chopped fine
      1 T. parsley, chopped
      1 c. Zesty Italian dressing, may use lite for less calories
      2 c. tomato juice, or V-8
      1/2 tsp. creole seasoning
      1/2 tsp. Montreal Steak seasoning
       
      Mix all together in a large bowl, chill well before serving.   Serves 6-8
      If you like it spicy hot, add jalapeno.  You may also use cilantro instead of parsley.  Additions could be avocado and or shrimp.
